Twisty Fried Rice


Ingredients

Rice
Onion
Veggies: Peas, celery, carrot
Salt, Chilli powder, Garm Masala, turmeric
Cumin seeds, whole coriander, kalonji seeds.

Preparation

Cook the rice till its 3/4 cooked.
In separate pan warm up the oil. Add cumin seeds, whole coriander & kalonji seeds. After the seeds pop, saute onion and veggies of your choice. Now add the cooked rice along with salt, chilli powder, garm masala & turmeric.

Mix the rice and veggies. Let it cook till rice becomes soft.

This fried rice can served with chilli sauce or green chutney

Chinese cauliflower rice

Ingredients:
Soy sauce
Peanuts
Corn starch
Honey
Cauliflower
Tofu
Rice
Oil
Salt, Red chilli

Preparation:
For the gravy, take 2 cups of water in pan and add 2 spoons of honey. Also add 2 tsp soy sauce and put on heat. In separate cup, take one spoon of corn starch and mix with small quantity of water. Add the corn starch paste to boiling water. Let it simmer for couple of mins till the mixture thickens and then take off the heat.

For main dish, take oil in pan and add chopped garlic & peanuts. Saute these till they turn golden brown. Now add cut cauliflower & tofu pieces. Saute the veggie till it becomes slightly soft. Also add salt/red chilli as per your taste.

Also, you would require pre-cooked rice. You can use either left overs or cook the fresh ones. Add the rice to above veggie pan and mix well. When the veggie and rice have mixed well, pour the gravy on top.

This dish was hit, as my daughter loved eating cauliflower :)

Thai Lettuce Wrap

Ingredients:
Tofu
Cabbage
Peanuts
Soy Sauce
oil
garlic
Spring onion
vinegar
Asian Chili sauce
Seasoning - salt, red chili powder
Lettuce

Preparation:
Take some oil in pan and saute the chopped garlic. Also add crushed peanuts chunks. Let these saute till these turn golden brown. Then add small chunks of tofu, thin slices of cabbage, soy sauce and chopped spring onion. After cooking for couple minutes add salt, red chilli powder and chilli sauce. If you want, you can also sprinkle vinegar in it.

Wash each lettuce leaves carefully and place in separate bowl. The above mixture can be put in each leaf to create the wrap.

Pancake with Strawberries

Ingredients:
Pancake Mixture
Fresh Strawberries
Honey

Preparation:
Add water to Pancake mixture to make smooth consistent paste. For kids, who might not eat strawberries, grate the fresh strawberry into the pancake mixture. Cook the pancake and add honey on top.

For those who relish strawberry, put the sliced fruit on pancake and pour warmed honey on the top.

Thai Vegetable curry

Ingredients:
Coconut Milk
Veggies (Beans, Cauliflower, Carrot, Bell Pepper, broccoli)
oil
Salt
Red chilli powder
Rice

Preparation:
Take some oil in pan to saute the vegetables. When the oil is hot, add all the cut veggies of your choice. I usually add broccoli, zucchini, bell pepper, carrots. After few minutes of saute, add salt, red chilli powder and add coconut milk can. Simmer for few mins and take it off the heat. Make sure that the veggies have little crunch in them rather than fully cooking them.

Eat the curry with rice.

Sandwich with cheese cabbage bellpepper stuffing

This sandwich is very simple to make, but it sure tastes very different and yum.

Ingredients:
Cheese/Paneer/Tofu (Grated)
Cabbage (finely cut)
Bell pepper (finely cut)
Salt
Black chilli powder
Red chilli powder
olive oil
Bread

Preparation:
Mix grated cheese, finely cut cabbage and bell pepper. Add seasoning of your taste like salt, red chilli and black pepper. You can also add fresh green chilli according to your taste.
Apply little bit of olive oil on one side of bread piece. Place the above stuffing on the bread and put another piece of bread on top of it. Apply oil on outer side of bread piece and out in the sandwich maker. The sandwich will be ready in few minutes.

Onion Pakora


I love this recipe due to the crunchiness in onion pakora, whose secret ingredient I learned from friend.

Ingredients

Onions (cut in long)
Rice flour (secret ingredient) (1/3 cup)
Gram flour (2/3 cup)
Spinach
Seasoning
Oil to fry

Preparation

Cut the spinach and onion. Make thick paste of gram flour and rice flour. Add onion, spinach and seasoning. Now fry the pakoras and enjoy the crunch.

Daal Chille



Ingredients:
All types of lentils
Salt, black pepper, red chilli powder

Prepration:
Soak all types of lentils in quantity of half bowl each. Let it soak over night.
Then grind this soaked lentils till becomes fine paste. Add little water if needed.
Put this paste into covered bowl and keep it in oven for a day to ferment. After day fermentation, add seasoning to the mixture of your tsate. You can put salt, red chilli, coriander powder or garm masala. Prepare chille fro the mixture. These can be relished as such or with tomato ketchup or mint chutney.

Besan Chille

Ingredients:
250gm Besan (Makes about 6 chille)
any chopped Veggies(e.g broccoli, cauliflower, cabbage, bell pepper, zucchini, tomato, onion)
Grated tomato
Sesame seed
Salt
Black chilli powder
oil

Preparation:
Add water to besan gradually to make sure there are no lumps. Keep adding the water till its loose consistency. Now add grated tomato to the mixture. Also add finely chopped vegetables into this mixture.

Cook the chille on non-stick pan. You can eat with ketch up or mayonnaise.

Garden Pasta




This recipe is Indian style pasta with no pasta sauce.

Ingredients:

Pasta
ginger
cut veggies of your choice - broccoli,carrots, zucchini, beans bell peper
Julianne size onions
black crush pepper
salt
tomato chilli ketchup
olive oil

Prepration:
Boil pasta with little oil and salt. To boil pasta, I use pressure cooker. It takes only whistle and pasta is cooked in less time.

In seperate pan, heat up olive oil. After the oil is little hot, add chopped ginger. Saute it a bit and add cut broccoli, carrots, beans, bell pepper. In last add, zucchini and onions.

After the veggies are little saute, add salt/black pepper/tomato chilli. Add this mixture to pasta and enjoy the hot/sazzy indian style pasta.

Bhuga ladoos


Bhuga is special sweet prepared in my home during the festival of Lohri. On the Lohri 2010, I thought of making Bhuga for the first time.

Ingredients:

Seasame seeds, Khoya, Sugar
(All three items in same quantity)

Preparation:

I started with 400gm of seasame white seeds. Roasted these in the non-stick pan without oil. Roasted on the slow flame so that the seeds don't turn brown. After roasting the seeds, grind them to fine powder and keep it in bowl.

Now heat up the pan and add whole khoya till becomes soft. After softening the khoya, add grinded seeds and mix these well. In last, add equal quantity of sugar.

Let the mixture cool down a bit and then make balls.
Bhuga is ready to be eaten :)

Namkeen Seviyan with crunch twist


Ingredients :

1 Kg Besan,
1 cup Sooji,
1/2 cup makki,
2 Spoon Ajwain,
According to taste: salt, red chilli, black chilli powder
Oil for frying
Ojus Machine

Preparation:
Mix all the ingredients and add 6 spoons of oil. Dough this mixture such that the oil mixes well with all the dry ingredients. Now add water and make think dough. The consistency of the dough should not be too loose or too hard.

Now heat up the oil for frying. Add the mixture into the ojus machine. Press the machine gradually to take out the besan mixture into the frying oil in circle shape. Let it fry for 4-5 minutes and then turn it upside down. Let it fry for some more time and then take out of oil.

This circle of seviyan can be broken down into smaller pieces or relish as it is !!
